Tomato Macaroni Soup

This is a yummy monsoon treat recipe. Soups are very comforting during rainy days. In here its been heavily pouring since a week. I couldn’t think of anything better than this delicious bowl of soup. And that too when you make it at home then definitely you are in heaven.. The herbs makes the soup flavorful and aromatic. 

It’s so easy and versatile. Try this soup recipe with different pasta or just the soup. I have added spinach which is totally my idea. You can also try adding kale or any other greens. Customizing your soup is not difficult. And most people end up making soup when they need to clean up their refrigerator ūüôā

Preparation time: 15 mins
Cooking Time: 30 mins
Level: Easy

Ingredients:

Macaroni (Uncooked) 50 gm
Tomato 450 gm/ 4 medium sized
Onion 100 gm/ 1 small
Celery 50 gm/ 2 stalks
Carrot 100 gm/ 1 medium
Spinach 75 gm
Garlic 2 cloves
Olive oil / Butter 1 Tbsp
Basil (Dried) 1 Tsp
Orgeno (Dried) ¬Ĺ Tsp
Fennel seed powder ¬Ĺ Tsp
Chicken/ Veg broth 4 cups approx
Black pepper powder For taste
Salt For taste

Method :
1. Cook macaroni as per the instruction given on the package. Drain water from macaroni
    completely and keep aside. It took me around 10 mins to cook them.
2. Immerse tomatoes in the boiled water for 3-4 mins. Peel off the skin and crush them using
    fork or spatula.
3. Heat olive oil in a sauce pan. Add garlic and onion. Saute for 4-5 mins and add the
    broth/water, crushed tomatoes, chopped carrot, celery and salt.
4. Bring it to boil. Now add fennel seed powder, basil and oregano. Reduce the heat to low and  
    close the lid. Cook for 15 mins or till the vegetables are soft.
5. Add the spinach. Stir for few secs and cook for 10 more mins. 
6. Season with pepper powder.
7. Add the cooked macaroni to the soup and give a stir.
8. Turn off the heat and garnish with fresh basil and shredded cheese on top.


Notes:
1. You can also use any other pasta instead of macaroni.
2. Additionally use any vegetables of your choice
3. Add the macaroni to the soup only if you are about to serve immediately. Otherwise it will
   soak well and reduce the quantity of soup making it thicker.

Creamy Tricolor Rotini Pasta Salad

¬†Always I find fun to make salads. No matter what I have in my hand, it may be pickled veggies or fresh ones, meat or veg, Pasta or Tuna, creamy dressing or Vinaigrette I use to enjoy throwing in whatever available.. So here is one of our favourite pasta salad. Since¬†I made this accidentally,¬† I have used very few ingredients. Usually I use a combination of yogurt/sour cream and mayonnaise for dressing. Though I haven’t used yogurt here, I managed to make it creamy and taste the same.¬†

Ingredients:
1)      Tri colour Rotini Pasta                       100 gm
2)      Lettuce                                               2 Leaves
3)      Olives                                                 10 nos
4)      Cucumber                                           1 small
5)      Plum tomato                                       5 nos
6)      Mayonnaise                                        2 Tbsp
7)      Black pepper powder                          1 Tsp
8)¬†¬†¬†¬†¬†¬†Salt¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬†¬ľ¬†Tsp¬†¬†¬†¬†
Method:
1)    Boil water in a large pan. Once water comes to boiling temperature immerse the pasta. Turn heat
to low and cook for another 10 minutes.  Keep it aside till it cools down.Or cook the pasta as per
the instruction given in the package.
2)    Chop the cucumber, olives and lettuce. Cut the plum tomatoes into half. Since I had no plum tomatoes
stored, I have used normal tomatoes
3)    Mix pepper powder and salt with the mayonnaise.
4)    Combine all the vegetables and mayonnaise dressing with the pasta and mix gently. 


Note:

1)      If you want meat in your salad add chopped bacon, ham or any sausages. 
2)      I have used green olives. For colorful salad use black olives instead.
3)     If you are gonna mix yogurt/sour cream with mayonnaise, only add half the quantity of 
mayonnaise mentioned here.

Spaghetti Bolognese

Spaghetti Bolognese with a glass of Red wine not only liked by “Don” ūüėČ but a huge population in earth likes this dish. It’s time taking recipe to prepare but its worth waiting. Cooking spaghetti bolognese is not so difficult but require all your attention while its been cooked. The end result definitely speaks about your passion and the care you put throughout the process. Hence its best for showing your love and care to your loved ones. An evening with candle light dinner having spaghetti bolognese and red wine on the table, fun talks with loved one is all what we need in our life :).hmmm ¬†Sorry guys i just closed my eyes and thought of ¬†my spaghetti evening ha ha… Impress your loved ones with this recipe.¬†Traditionally¬†bolognese is cooked with minced beef. Since most of the Indians don’t eat beef it can be substituted with minced lamb or pork.

Level:Moderate
Ingredients:

1)       Spaghetti
150 gm
2)       Minced Lamb/Pork
150 gm
3)       Parmesan Cheese
30 gm
4)       Onion
170 gm (1 medium size)
5)       Tomato
450 gm (4 nos)
6)       Red wine
30 ml
7)       Chicken stock
30 ml
8)       Tomato sauce
3 Tbsp
9)       Water
100 ml
10)  Thyme/Parsley
2 Tsp
11)   Black pepper powder
¬Ĺ Tsp
12)   Olive oil
2 Tbsp
13)   Salt
as req

 Method:
1) Add oil in the hot pan followed by onion
2) Fry onions till brown for approx. 2 mins in medium flame
3) Add minced lamb/pork. Stir well
4) Boil tomatoes. Get the skin peeled off and make puree
5) Add tomato puree, pepper powder & salt to the meat mixture. Stir well
6) Add tomato sauce and Thyme/Parsley whichever available
7) Add chicken stock, simmer and let it boil for 1 hr stirring occasionally.
For spaghetti:
1) Boil spaghetti in water as per the instruction in the pack
2) Drain excess water and add little oil. Mix well
3) Heat oil in a separate pan and toast spaghetti
4) Add thyme and Stir well
Plating:
1)      Take half of the cooked spaghetti and place it on the serving plate.
2)      Pour the sauce on the top of spaghetti and grate cheese over it.
3)       Heat it in microwave till cheese melts.


Note:
              1)      I have reduced the Bolognese sauce since I like them thick.
                          If you want it runny and creamy add more water and cook thouroughly.
                    2)      Cheese part is traditional way but if you want to keep fat out 
                          then you can omit that part as I did.
